OLIE BOLLEN (DUTCH FRITTERS) 
3 eggs
1 apple, chopped fine
1 c. currants
1 c. sugar
1 c. buttermilk
4 1/2 c. flour
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt

Beat eggs. Add apple, currants, sugar, and buttermilk. Sift flour and dry ingredients together and mix with liquid mixture. Drop by tablespoons into hot oil and deep fry as for doughnuts. Drain and roll in 1/2 cup sugar and 1/2 teaspoon cinnamon.
