ZUCCHINI CASSEROLE 
3 c. sliced zucchini
1/2 c. sliced onions
8 oz. carton sour cream
1 can cream of chicken soup
1 pkg. Stove Top stuffing (chicken flavored)
1 can sliced water chestnuts, optional

Melt 1 stick of butter in skillet. Add stuffing mix. Set aside. (reserve 1/2 cup). Cook zucchini and onions until tender. (drain). Mix zucchini, onions, soup, sour cream, water chestnuts and stuffing mix all together. Pour into an 8 x 8 casserole. Sprinkle reserved stuffing mix on top. Bake in 375 degree oven 30 minutes.
