CRUMB TOPPED CREAMED SPINACH 
1 (18 oz.) pkg. cut leaf spinach
1/4 c. butter
3 tbsp. fine chopped onion
3 tbsp. flour
1 1/2 c. milk
1 tsp. salt
1/8 tsp. nutmeg
1/3 c. Parmesan cheese
1/2 c. dry bread crumbs
1 1/2 tbsp. butter, melted

Cook spinach and drain. In large cooking pot or Dutch oven, melt 3 tablespoons butter. Add onions - cook until tender. Blend in flour, salt and nutmeg - stirring over low heat. Gradually add milk, stirring until sauce thickens. Add cheese and spinach. Heat thoroughly. Mix bread crumbs and melted butter. Place spinach in serving dish and sprinkle with bread crumb mixture.
