FISH AU GRATIN 
6 fillets (red snapper is great!)
1/4 c. melted butter
3/4 c. soft bread crumbs
1/4 c. grated Parmesan
2 tbsp. snipped parsley

Thaw fish if frozen. Place on greased broiler rack. Brush with 2 tablespoons of the butter. Broil 4 inches from heat for 5-10 minutes or until fish flakes easily.

Mix remaining ingredients with remaining butter; toss well. Sprinkle crumb mixture over fish. Broil 1-2 minutes longer or until golden brown. 6 servings.
