3 lg. onions, sliced 2 green peppers, sliced 3 tbsp. shortening 1 lb. ground beef 2 c. (1 lb. can) tomatoes 1 c. cooked rice 1 tsp. chili powder 1 tsp. salt 1/8 tsp. pepper 1/2 c. buttered bread crumbs Brown onions, green pepper in shortening. Add meat and cook until raw appearance is gone, stirring frequently to crumble meat. Add tomatoes, rice, salt, pepper and chili powder. Pour into greased baking dish. Sprinkle crumbs over top. Bake in moderate 350 degree oven until thoroughly heated and crumbs are brown. Yield: 4 servings. |
