GINGER COOKIES 
2/3 c. oil
1 c. sugar
1 egg
4 tbsp. molasses (or honey)
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. ginger

Mix together until smooth oil, sugar, egg and molasses. Mix dry ingredients together and slowly add to oil mixture.

Drop be teaspoonfuls on cookie sheet. Leave room for cookies to spread. Bake for 15 minutes at 350 degrees.
