SWEET AND SOUR MEATBALLS | |
1 1/2 lb. ground beef 1/2 c. bread crumbs or oatmeal 1 egg, slightly beaten 1 tsp. salt 1/2 c. milk 1/4 tsp. pepper 2 tbsp. flour 2 c. tomato juice 3/4 c. barbecue sauce 1 2/3 c. pineapple chunks in syrup or 1 sm. can crushed pineapple 1/2 c. grated cheese In a mixing bowl, combine meat, bread, salt, pepper, egg and milk. Shape mixture into 1 1/2 inch balls. Place in 9 inch shallow baking pan. Bake at 350 degrees for 30 minutes. Put flour in saucepan, gradually stir in tomato juice until smooth. Add barbecue sauce and pineapple with syrup. Pour over meatballs. Bake 40 minutes longer. Add cheese and bake 5 minutes longer. Serve over rice. |
