2 c. mashed sweet potatoes
4 eggs
1/2 c. honey
1/2 c. light brown sugar, packed
1/3 c. melted butter
1 tsp. pumpkin pie spice
1 tsp. vanilla extract
1 (9") pastry shell

Combine all ingredients in mixer. Beat 1 minute on medium (or until smooth). Pour in pie shell and bake at 350 degrees for 60 minutes or until set. Let cool. Serve with sweetened whipped cream.
