ROAST BEEF 
2 1/2 - 3 1/2 lb. beef roast
1 tsp. red wine vinegar
6 med. potatoes
4 carrots
4 ribs celery
8 oz. pkg. mushrooms (fresh)
Salt and pepper to taste
1 tsp. mustard
1 tsp. horseradish
10 sm. onions
2 cloves garlic
1 can beef broth or consomme, or Lipton onion soup mix with water

Put roast with all ingredients into a covered roaster. Put in oven at 325 degrees until desired doneness. Bake 2 1/2 hours for medium. 140 degrees for rare, 160 degrees for medium and 170 degrees for well done. I use no salt; enough is in the ingredients!
