PINEAPPLE CHEESECAKE 
3 pkg. Stella Doro unfilled lady fingers
19 oz. cream cheese
Med. size can crushed pineapple (12 or 16 oz.)
1 pt. heavy cream
1 c. sugar
3/4 tsp. vanilla

Line springform pan (bottom and sides) with lady fingers (center lady fingers should be split in half). In one bowl, mix cream cheese, sugar and vanilla. In second bowl, whip cream until it peaks, but not too thick, add 1 tablespoon sugar. Add cream cheese mixture to cream, mix well by hand. Put 1/2 of mixture into pan. Make one layer of lady fingers. Put 1/2 can of pineapple (drained) over this. Put rest of mixture, then rest of pineapple. Refrigerate overnight.
