SPINACH PIE 
1 9-inch crust
1 pkg. frozen chopped spinach or 1 lb. fresh chopped spinach
1 egg
8 oz. American cheese, cut
1 (4 oz.) can mushrooms or 1 lb. fresh
1 sm. onion, sauteed

Cook spinach and drain well. Let cool slightly. Add egg, cheese, and 3/4 of mushrooms and onion. Mix well. Put into pie crust. Cover with balance of mushrooms. Bake at 350 degrees for 45 minutes for 1 hour.
