PARKER HOUSE ROLLS 
1 pkg. dry yeast
1/4 c. warm water
1 c. milk (scalded)
1/4 c. sugar
1/4 c. melted shortening (Crisco)
1 tsp. salt
3 1/2 c. all purpose flour
1 egg

Soften the yeast in warm water. Combine the milk, sugar, shortening and salt. Cool the combined ingredients to lukewarm (hint, do not let the combined ingredients cool past the lukewarm stage or the rolls will be heavy in texture).

Add to the combined ingredients 1 cup flour. Beat well. Beat in the egg and yeast. Gradually add the remaining flour, beating well. Cover and let rise in a warm place until doubled. Knead on a lightly floured surface, roll out the dough until 1/4 to 1/8 inch thick.

Cut the dough and place in greased pan (melted butter can be place on top). Let rise until doubled again. Cook in a moderate 350 degree oven for 15 to 20 minutes or until golden brown on top.
