PARTY SQUARE CAKE 
1 c. butter
1 1/2 c. sugar
4 eggs
2 c. flour
1 tsp. lemon extract
1 can of your favorite pie filling or preserves
Confectioners' sugar

Cream butter. Gradually add sugar and beat until fluffy. Beat in eggs and extract. Add flour and mix thoroughly. Pour mixture into a greased 13 x 9 x 2 inch pan. Mark off into squares with a table knife (batter is stiff.) Make little dents in each square with back of spoon. Place 1 tablespoon of filling or preserves in center of squares. Bake at 350 degrees for 30-40 minutes. When cool cut again. Dust with confectioners' sugar. Makes about 20 squares.
