JIFFY REUBEN CASSEROLE 
1 (16 oz.) can sauerkraut, drained
1/4 c. chopped onion
1/4 c. chopped parsley
1 tsp. caraway seed
2 c. shredded Swiss cheese
2/3 c. Thousand Island dressing
1/2 lb. corned beef
3 slices rye bread, cut into 1/2 inch cubes
1/4 c. melted butter

Combine sauerkraut, onion, parsley, and caraway seed in medium bowl. Mix well. Layer kraut mixture in bottom of 8-inch square baking dish. Top with 1 cup cheese, 1/3 cup dressing, and corned beef. Top with 1/3 cup dressing and remaining cheese. Toss bread in butter; sprinkle all over. Bake in 375 degree oven for 35 minutes. Makes 6 servings.
