STUFFED PEPPERS WITH SAUCE 
1 1/2 lb. ground beef
2 med. sweet onions, chopped
1/3 c. fresh parsley, chopped
2 celery sticks, chopped fine
1 carrots, chopped fine
1 sm. clove garlic
1 1/2 tsp. salt
1/8 tsp. pepper
Tomato pulp of 8 tomatoes (12 c.)
3/4 c. cooked brown rice
1 tbsp. sugar

Brown meat and onions together on high heat; add parsley and remaining ingredients including tomato pulp. Simmer 5 to 7 minutes.

Add rice last and cook until rice just starts to swell (brown rice needs to cook about 30 to 40 minutes first.) Add 1 tablespoon sugar. Stuff peppers (or tomatoes), approximately 12.

SAUCE:

1 lg. can tomato sauce
2 tbsp. olive oil
1 tsp. Italian seasoning
Salt & pepper

Cook sauce 5 minutes. Pour over stuffed peppers. Bake at 350 degrees for 1 hour.
