EGGPLANT HOTDISH 
4 c. eggplant, cubed and blanched
2 tbsp. onion
1 lb. ground beef
2 beaten eggs
2 tbsp. butter and lard
1 tsp. salt
1 c. bread cubes
2 tbsp. LaChoy Sauce and some pepper

Brown ground beef and onion in butter. Pour milk over to cover 1/3 full. Bake 40 minutes or until done in a 350 degree oven.
