RICE AND ARTICHOKE SALAD | |
1 box Rice-a-Roni 2 jars marinated artichoke hearts 5-6 green onions, chopped 1 bell pepper, chopped fine 1/2 c. mayonnaise 1/2 tsp. curry powder (or more to taste) Cook Rice-a-Roni according to directions. Drain artichokes and keep 1/4 cup marinade. Mix cooked rice, artichokes (cut in thirds), onions, and bell pepper. Mix mayonnaise, marinade and curry; pour over rice mixture and blend all ingredients. Chill over night for best blend. Serves 8-10. |
