POTATO SALAD | |
4 c. diced cooked potatoes (about 6 med.-size) 1/4 c. French dressing 1 med.-size onion, diced 1 c. chopped celery 1 c. diced green pepper 2 hard-cooked eggs, chopped 1/4 c. diced cucumber 1 1/2 tsp. salt 1/8 tsp. pepper 1/8 tsp. paprika 1 c. salad dressing Combine potatoes and French dressing. Allow to stand about 1 hour. Add onion, celery, green pepper, cucumber, salt, pepper and paprika in large bowl. Mix thoroughly. Add chopped eggs and salad dressing. Mix lightly so ingredients retain their shape. Cover and place in refrigerator for at least 2 hours before serving. NOTE: Chopped or sliced olives, pickles, chives, celery seed, parsley, carrots or radishes may also be added. This makes 6 servings. |
