MEAT PASTRY "POCKETBOOKS" | |
3 c. flour 1 tsp. salt 1 c. shortening 5 tbsp. cold water Roll out pastry. Divide into 2 parts to fit 9 inch pan. FILLING: 2 sm. potatoes, pared and sliced thinly 1/2 lb. finely diced beef chuck (or other meat) 2 tbsp. chopped onion 2 sm. carrots, thinly sliced 2 sm. turnips, thinly sliced Salt, pepper and butter Combine filling ingredients. Separate filling in half. On each round of pastry put a layer of potato, meat, onion, carrots, turnips and beef. (A layer of each). Dot with butter. Fold pastry over filling to make a "POCKETBOOK" and seal edges with fork. Slit top to allow steam to escape while baking. Place on cookie sheet. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake 40 minutes longer or until golden brown. |
