CHICKEN PARMESAN 
6-8 chicken breasts, skinned & deboned
2-3 beaten eggs
1 c. seasoned bread crumbs
3 tbsp. Parmesan cheese
1 (30 oz.) jar Prego spaghetti sauce
Mozzarella cheese, sliced
1/4 c. olive oil or corn oil

Mix 3 tablespoons Parmesan cheese with 1 cup bread crumbs. Dip chicken first in crumbs, then in beaten eggs and back into crumbs. Refrigerate about 2 hours (or overnight). Brown in oil and drain on paper towels.

In shallow baking dish pour the jar of spaghetti sauce to which you have added 1/3 jar water. Place chicken breasts on top. Put a slice of mozzarella on each piece. Bake at 350 degrees for 30-45 minutes until sauce is bubbly and cheese melts. Over baking will dry out chicken.
