WHOLE GRAIN APPLE MUFFINS 
1 1/4 c. all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
2 tbsp. brown sugar
2 c. Nutri-Grain cereal (any variety)
1 1/2 c. milk
1 egg
1/2 c. finely chopped apples
3 tbsp. vegetable oil

Stir together flour, baking powder, salt, cinnamon and sugar. Set aside. Combine Nutri-Grain cereal and milk in large mixing bowl. Let stand until cereal is softened, about 5 minutes. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Stir in apple. Portion batter evenly into 12 greased 1 1/2" muffin tins. Bake at 400 degrees for 20 minutes or until lightly browned. Serve warm. Yield: 12 muffins.
