EGGLESS PUMPKIN COOKIES 
1 c. brown sugar, packed
1 c. cooked pumpkin
1/2 c. shortening
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. raisins
1/2 c. chopped nuts (optional)

Mix together and brown sugar, pumpkin, shortening and vanilla. Combine flour, soda, baking powder, salt and spices. Stir this dry mixture into the pumpkin mixture. Stir in raisins and nuts. Drop by teaspoonfuls onto a cookie sheet. Bake 12-15 minutes at 350 degrees. Refrigerate.

Quick easy and great tasting! I used pumpkin pie spice instead of the cinnamon and nutmeg and omitted the raisins and nuts. Came out great, soft fluffy and moist.
