SHRIMP STUFFED STEELHEAD 
1 (6-8 lb.) steelhead (left whole with skin)
2 boxes stuffing mix
1/2 lb. shrimp, peeled & cooked
Salt & pepper

Lay whole cleaned fish on a large cookie sheet covered with 1 large sheet of foil. Fix stuffing (per box instructions) and add shrimp. Salt and pepper cavity of fish. Stuff stuffing mixture into fish. Lay excess stuffing around belly of fish on foil. Cover and seal tightly with more foil. Bake 1 hour at 350 degrees. Remove fish from oven. Take off top foil and peel off top skin. Bake 15 minutes longer without foil. Serve right from oven. Fish should flake from bone.
