DELMONICO POTATOES 
5 c. cold boiled potatoes, cubed
Dry bread crumbs, fine
8 tbsp. flour
1 tsp. salt
1 1/3 c. Parmesan cheese
8 tbsp. butter (1/2 c.)
4 c. milk
Pepper

Make white sauce using butter, flour, milk, salt and pepper. Heat cubed potatoes in sauce. Let stand 30 minutes. Place in baking dish. Alternate layers of creamed potatoes and sprinkled cheese. Sprinkle buttered crumbs over top. Bake at 350 degrees in oblong baking dish (11 3/4 x 7 1/2 x 1 3/4 inches) until bubbly and crumbs are brown 30 or more minutes.
