SICILIAN MEAT LOAF | |
1 1/2 lbs. chopped meat 1/3 lb. capricole (hot Italian ham), sliced very thin 2 c. grated Mozzarella cheese 2 eggs 1 sm. can tomato sauce 2 to 3 handfuls Italian bread crumbs Place eggs, tomato sauce and bread crumbs in bowl and mix well. Add meat and mix well with hands. Place mixture on waxed paper and shape into rectangle about 1/4 inch thick. Place ham evenly over rectangle. Sprinkle cheese over the ham and roll rectangle front to back. Pat sides closed and place on seam in lightly oiled loaf pan. Bake at 350 degrees for 1 hour and 15 minutes. Allow to cool before slicing. |
