CRUMBED MUSSELS 
24 mussel meats
1 egg
3/4 c. dried bread crumbs
1/4 tsp. salt
Shake of pepper
1 tsp. cooking oil
Fat or oil for frying

Beat egg. Add seasoning and oil. Dip each mussel in egg, then in bread crumbs. Shallow or deep fry for 2-3 minutes, or until golden brown. Drain and keep hot until served. Garnish with parsley or fresh lemon. May be served with tartar sauce. Ideal as an entree or main course with French fries and eggs.

Serves 4-6.
