ZASHKAS 
1 box of social tea biscuits
6 oz. of semi-sweet chocolate chips
1 c. of coffee (boiling)

In top of double boiler melt the chocolate chips with 1/4 cup of coffee. Stir until smooth and then set aside to allow to cool slightly. Lightly dip the underside of a social tea biscuit in the remaining (cooled) coffee and place coffee side UP on wax paper. Spread a small amount (approximately 1/2 teaspoon) of the chocolate mixture on the biscuit.

Take a second biscuit and dip the top side in the coffee and place it topside UP on top of the first biscuit, so that you now have a cookie sandwich. Spread a small amount of chocolate mixture on the top of the cookie sandwich. Repeat with the remaining biscuits and chocolate mixture. Refrigerate cookies.

VARIATIONS: Add 1 tablespoon of your favorite liquor to chocolate mixture.
