HOUMA OYSTERS ALA BIENVILLE 
4 dozen oysters
1 lb. cooked shrimp
1 sm. pkg. fresh mushrooms, sliced
5 cloves garlic (optional)
1 lg. finely chopped onion
1 block butter
4 tbsp. flour
1 1/2 c. milk
1/2 c. cream
1 1/2 c. chicken broth
1/4 c. white vermouth
Grated Parmesan cheese
Bread crumbs (optional)
Paprika

Dice fine the shrimp, mushrooms, garlic, onion. Melt butter, stir in flour, then add milk, cream, broth, wine. Stir constantly until thickened. Add chopped ingredients and simmer slowly for 15 minutes. Put oysters in shells on rock salt and slide over hot broiler for 2 minutes. Drain off liquid in shells. Cover oysters with sauce, grated cheese, bread crumbs and paprika. Brown under broiler until bubbly. Serves 8.
