Prepare a chocoalte cake mix according to directions and put in greased and floured 13 x 9 pan. Set aside. Don not bake yet.

Beat:

2 lb. Ricotta cheese (must be dry, not moist cheese)

Add:

3 eggs
3/4 c. sugar
2 tsp. vanilla

Mix thoroughly and spoon this mixture over prepared cake mix. Spread evenly. Bake at 350 degrees for about 60 or 70 minutes, until center is firm. Cool.

Mix:

1 pkg. instant chocolate pudding
1 c. milk

Fold in:

1 carton heavy cream, whipped

Frost cooled cake. Note: Lemon may be substituted for chocolate cake mix and pudding.
