BANANA BREAD 
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
2 c. flour
2/3 c. sugar
1/3 c. shortening
2 eggs
1 tsp. vanilla
3 bananas, well ripened

Mix first 4 ingredients and sift. Working sugar in, cream shortening until very light. Break eggs separately into shortening; beat thoroughly each time. Mash bananas with potato masher and stir into shortening. Add vanilla. Next add flour mixture in several parts, beating after each addition. Empty into pan of 8 x 4 inches. Bake at 350 degrees (moderate) for 50 minutes. Do not slice until cool.
