FUDGE CAKE 
1 1/2 c. plain flour
1 1/2 c. buttermilk
1 1/4 c. granulated sugar
1/2 c. unsweetened cocoa
1/4 c. plus 2 tbsp. reduced calorie butter
2 tbsp. plus 1 tsp. regular butter
2 lg. eggs
2 tsp. baking soda
1 tsp. vanilla extract
1/2 tsp. salt

Preheat oven to 350 degrees. Place all ingredients in bowl. Mix on high speed until batter is smooth. Pour batter into a 12 cup bundt pan. Bake 40 minutes or until top springs back when lightly touched. Cool on rack 15 minutes, then remove from pan. Makes 16 servings. 164 calories, 3gm protein, 5gm fat, 27gm carbohydrates, 269mg sodium.
