SPLIT PEA SOUP 
1 c. dried green split peas
Beef knuckle, cracked or ham bone
1 (No. 2) can (2 1/2 c.) tomatoes
1 med. onion, peeled and chopped
1 1/2 qts. water
1 bay leaf
1 tsp. salt
Dash pepper

Wash and pick over peas. Add remaining ingredients. Cover; simmer 2 hours, stirring occasionally. If the soup thickens too much, add additional boiling water. Remove bone. Press soup through sieve. Serve hot with croutons. Makes 6 servings.
