SPICED CARROT MUFFINS 
1 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg
Pinch of ginger
Pinch of allspice
3/4 c. brown sugar
1 egg
1/2 c. buttermilk
1/3 c. oil
1/2 tsp. vanilla
1 1/2 c. grated carrots
1/2 c. raisins
1/2 c. chopped nuts

Preheat oven to 400 degrees. Grease muffin pans. Measure dry ingredients into bowl. Stir with fork until mixed. Beat together egg, milk, oil and vanilla. Stir in carrots, raisins and nuts. Pour into dry ingredients. Stir until all are moist. Pour into muffin pan. Bake 15 to 17 minutes.
