1 cup chopped or sliced fresh mushrooms
non-stick cooking spray
2 tbsp. light sour cream
1/4 cup water
2 (3/4 oz. ea.) wedges Laughing Cow Cheese
few dashes salt (optional)

Spray skillet with cooking spray. Sauté mushrooms until lightly browned. Add remaining ingredients and heat through until cheese is melted. Season to taste with salt if desired.

Serve over meats, pasta, garlic toast, omelets, etc.
