VANILLA PUDDING FROM SCRATCH 
1/3 c. sugar
1/4 c. cornstarch
1/8 tsp. salt
2 3/4 c. milk
2 tbsp. butter
1 tsp. vanilla

Mix first 3 ingredients. Gradually stir in milk until smooth. Cook and stir over medium heat until it boils, 1 minute. Remove from heat. Stir in butter and vanilla. Chill. Makes 2 1/2 cups. Can be doubled or tripled.

CHOCOLATE PUDDING:

In crease sugar to 2/3 cup and add 3 tablespoons unsweetened cocoa with cornstarch.
