CURRIED EGG STRATA | |
1/4 c. mayonnaise 4 slices firm whole wheat bread lightly toasted 4 slices firm white bread slightly toasted 3 hard cooked eggs 3 eggs 2 1/2 c. milk 1 tsp. curry powder 1/4 c. chopped green onion 2 oz. (1/2 c.) Swiss cheese, shredded 1 tsp. salt Combine mayonnaise and curry in small bowl. Spread mixture on 2 slices of whole wheat and 2 slices of white bread. Cut slices into quarters. Place on the bottom of a buttered 6 cup shallow baking dish. Slice hard boiled eggs over top of bread. Sprinkle with green onions and cheese. Cut remaining 4 slices of bread into quarters. Arrange in checker board design over the cheese. Cover and chill at least 1 hour or over night. Bake uncovered until puffed and golden at 375 degrees for 45 minutes. Let stand 10 minutes before serving. |
