BANANA CAKE 
1/2 c. butter
1 c. sugar
1 egg, well beaten
1 c. mashed bananas
1 scant tsp. baking soda dissolved in 1 tbsp. hot water
1 tsp. vanilla
1 tsp. nutmeg
1 1/2 c. flour with 1/4 tsp. salt

Use double recipe for layer cake. To butter, add sugar, cream well. Add rest of ingredients Mix well. For cupcakes, bake 15 minutes at 400 degrees. For layer cake, bake 30 to 35 minutes at 350 degrees.

BANANA CAKE FROSTING:

1 tbsp. butter
1 mashed banana
Confectioners' sugar
1/2 tsp. vanilla

Cream butter. Add banana and confectioners' sugar alternately until thick enough. Add vanilla.
