SOUTHERN SPOON BREAD 
3/4 c. corn meal
2 tbsp. butter
1 tsp. salt
1 c. boiling water
1 c. sweet milk
2 eggs
2 tsp. baking powder
Vegetable oil for coating pan

In large bowl, mix salt, meal and butter. Pour boiling water over this and stir well. Add baking powder and stir well. Add eggs and milk. Beat well. Lightly coat an iron skillet with corn oil and heat the pan approximately 5 minutes before pouring in the mixture. Bake in 450 degree oven until slightly brown on top.

Note: This cooks very quickly, so watch carefully. Cook just until it doesn't move in the pan when you shake it! Our oven cooks it in 18-20 minutes.
