EASY CHEESE MUFFINS 
3 3/4 c. biscuit mix
2 c. (8 oz.) shredded sharp Cheddar cheese
2 tbsp. poppy seeds
1/8 tsp. red pepper
1 egg, beaten
1 1/2 c. milk

Combine first 4 ingredients in a large bowl; make a well in the center of mixture. Combine egg and milk; add mixture to dry ingredients, stirring until moistened. Spoon into greased (1 3/4 inch) muffin pans. Bake at 350 degrees for 20 to 25 minutes. Remove muffins from pan immediately. Cool slightly on wire racks. Makes 4 1/2 dozen.
