DR. BIRD CAKE 
3 c. sifted flour
1 tsp. baking soda
2 c. sugar
1 tsp. salt
1 tsp. cinnamon
1 c. plus tbsp. cooking oil
1 (8 oz.) can crushed pineapple and juice
1 1/2 tsp. vanilla
3 eggs
2 c. diced ripe bananas

Mix first 5 ingredients into a large mixing bowl; mix thoroughly.

Add oil, pineapple, vanilla, 3 beaten eggs, 2 cups diced ripe bananas. Mix well, but do not over work the batter.

Bake in a greased and floured pan, 14 x 10 inches for 40 minutes at 350 degrees. Test for doneness by pressing lightly on cake in the center or by the toothpick test.

Cool 10 minutes on rack. Spread with a glaze made by mixing 2 cups powdered sugar, sifted, pinch of salt, 1/3 cup orange juice, and 2 tablespoon very soft butter.

Before spreading glaze, punch holes with a toothpick all over top of cake.
