BAMBOO BEEF 
1 lb. round steak (1-1 1/2 inch thick)
1 sm. onion, sliced
2 tbsp. oil
1/2 c. beef broth
8 oz. mushrooms, sliced
1 tbsp. cornstarch
1/4 c. soy sauce
1 tbsp. cold water
1/2 c. green onions, sliced
1 (8 oz.) can bamboo shoots, drained
1 (8 oz.) can water chestnuts, drained and sliced
1 (11 oz.) can mandarin oranges, drained

Put meat in the freezer for 45 minutes. Remove and slice into thin slices. Cook beef and onion in oil in wok or skillet until meat is browned. Add beef broth and mushrooms, cook 5 more minutes.

Combine cornstarch, soy sauce, and water. Stir into meat mixture. Cook, stirring constantly, until thickened. Stir in vegetables and fruit. Heat through. Serve immediately with chow mein noodles or rice. Preparation time = 45 minutes. Serves 4-6.
