NORWEGIAN CHRISTMAS BREAD 
2 pkg. yeast
1 1/2 c. lukewarm water
3 c. scalded milk
1 c. sugar
1/2 c. butter
2 eggs, beaten
2 tsp. salt
1 tbsp. rum flavoring
1 c. raisins
1/2 c. candied cherries
1 c. mixed candied fruit
10-11 c. flour

Dissolve yeast in water; pour hot milk over butter. When lukewarm, add yeast, sugar and rum flavoring. Add half of flour and salt. Beat well for 10 minutes. Add eggs and beat well. Add fruit and remaining flour. Knead until smooth and elastic. Place in greased bowl; let rise until double in bulk.

Knead down; let rise until light. Then, shape into round irregular loaves. Place in greased pan, brush tops with egg whites. When double in size, bake 35 to 40 minutes. When from the oven, brush tops with butter and sprinkle with sugar and cinnamon. Makes 5 loaves.
