HAWAIIAN RICE 
1 can Spam
1 can (or 2 cups fresh) crushed pineapple
2 cups long grain rice
4 cups chicken stock
4 tbsp. butter
1 med. onion
2 cloves garlic
salt
1 tbsp. crushed red pepper
1 tbsp. fresh ground black pepper
1 tsp. cumin
1 tsp. paprika
1 tsp. allspice
small dash of cinnamon

Cook rice in chicken stock with butter, salt, cumin, paprika, allspice, and cinnamon. Bring to a boil then reduce heat and simmer until stock is absorbed. While the rice is simmering, brown Spam, onions, garlic and pineapple in a large skillet with a lid on high heat. Add red and black pepper just before done. Combine rice and Spam mixture. Stir, reduce heat and cover. Simmer for 5 more minutes.

Let cool and serve.

Serves about 12.

Very good but I highly advise not using as much red pepper as called for! Very spicy which we happen to like but I think our average dinner guest would not care so much for. Also, leave off the cover when browning spam & pineapple. Nothing browns when covered and this allows the excess liquid evaporate. Otherwise you have a soggy salad. Overall this was excellent!
