OKRA AND TOMATOES | |
Rinse okra slightly, cut crosswise in 1/4" slices. Okra can be bruised, doesn't hurt. Use canned okra or frozen also. Fry 2 pieces bacon until crisp, save grease or use just bacon grease, or Crisco. 2 c. sliced okra 1 onion, chopped or sliced 1/2 green pepper if available Salt Paprika or chili powder 1 bay leaf (remove later) Little garlic salt, if desired 1 med. can any kind tomatoes, more if desired Keep adding a little water to keep soft. Have grease hot enough to fry okra to keep from being greasy, keep stirring until starts to brown well. Add onions, pepper, saute more. Turn fire down and add other ingredients, stirring well. Cook until tomatoes well cooked down, maybe 25 minutes. Makes good green vegetable dish, keeps well. |
