BUTTERSCOTCH PUMPKIN BARS | |
1/2 c. dark brown sugar 1/4 c. melted butter 1 egg, slightly beaten 1 c. mashed cooked pumpkin 1 tsp. vanilla 1 1/4 c. flour 1 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. ground ginger 1 c. butterscotch morsels 1/2 c. chopped nuts In bowl, mix the sugar and butter. Add the egg and stir well. Mix in the pumpkin and vanilla. In a separate bowl, stir together the flour, baking soda, salt, cinnamon, and ginger. Add the dry ingredients to the pumpkin mixture, mix just to blend. Stir in the butterscotch morsels and nuts. Spoon into a 9x9x2 inch baking pan that has been lightly greased. Bake at 350 degrees about 20 minutes. Cool. Cut into bars and serve. |
