SUMMER SPAGHETTI WITH FRESH
TOMATOES
 
3 c. finely chopped tomatoes
6 tbsp. chopped green pepper
6 tbsp. chopped green onions, white & green parts
4 tbsp. chopped fresh parsley
3 sm. garlic cloves, minced
6 tbsp. red wine vinegar
Salt to taste
Hot pepper sauce to taste
8-10 fresh mushrooms, sliced
Cooked spaghetti

Combine tomatoes, green peppers, onions, parsley, garlic, vinegar, salt and hot sauce; mix well. Add mushrooms; toss thoroughly. Serve at room temperature over hot spaghetti.
