16 lb. cucumbers 10 lb. sugar 1 sm. box alum 1 sm. box pickling spice 1 gallon vinegar 1 gallon water to which 1 c. of salt is added Pour brine over whole cucumbers let stand 14 days, weight cucumbers down under the brine to keep mold off. On the 15th day rinse in cold water to which alum has been added. Let stand 24 hours. Rinse again. Cover in vinegar and layer with 1 1/2 inch sugar. Tie spice in cloth bag and push half way down. Will remain in jar indefinitely. |
