VEGETABLE RITZ | |
9 x 11 inch pan (conventional) 1 lg. bag frozen broccoli and cauliflower 1 lg. bag frozen vegetables containing carrots, pearl onions & potatoes 1 lg. onion 1 (16 oz.) pkg. extra or sharp cheese, grated 1 pack Ritz crackers Salt & pepper to taste 1 c. mayonnaise May use extra mayonnaise for moisture 1/2 c. butter, melted Prepare frozen vegetables by placing them in pan and slice onion in various small slices; add to pan. Then cook in oven on about 300 degrees until vegetables are still firm. Do not over cook. If using microwave, check vegetables often for firmness. Then when firm, take from oven and add all cheese, salt and pepper and mayonnaise. Then crumble 1 pack of Ritz crackers over the top and pour melted butter over crackers and bake at 375 degrees for 12 to 15 minutes. |
