TABBOULEH 
1 c. fine bulgar (cracked wheat)
4 chopped tomatoes
2 c. chopped green onion
3 c. chopped parsley
1/4 c. chopped fresh mint
1/2 c. olive oil
1 1/4 tsp. salt
1/2 tsp. freshly ground pepper

Wash wheat. Cover with hot water. Let stand 30 minutes. Drain; squeeze dry. Mix together tomatoes, green onion, parsley, and mint. Stir in oil, lemon juice, salt, and pepper. Mix in wheat until well blended. Chill. 6 to 8 servings.
