PUMPKIN BREAD 
3 1/2 c. flour
3 c. sugar
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. nutmeg
4 eggs, room temperature
1 tsp. vanilla
2/3 c. water
2 c. pumpkin
1 c. salad oil
1 c. walnuts, chocolate chips, or raisins

Sift together flour, sugar, salt, soda, cinnamon, nutmeg; set aside. Beat eggs; add vanilla, water, pumpkin and beat until smooth. Blend in the oil; add dry ingredients and mix well. Fold in nuts, raisins, or chips.

Bake in three 7 1/2 x 3 3/4 x 2 pans or two 9 x 5 x 2 loaf pans that are greased only.

Bake at 350 degree for 1 hour. Cool in pans on rack for 30 minutes. Serve with confectioners sugar.
